Nutella Makes Everything Better

Nonna in Italian means Grandma.  
I have a Nonna and she is fabulous. 


I have the most wonderful memories of sitting in Nonna's kitchen, just talking the day away.  She's told me the most wonderful stories of growing up in Italy, moving to Venezuela, and sailing across the Atlantic to America.  The trials and tribulations of raising 5 children in a new country and learning to speak English.  Stories of her mom and dad, who I never had the opportunity to meet.

I wish I had a tape recorder so I could remember all the details, the moments that had me cracking up and even the moments that made tears well up in my eyes.

One thing you should know; don't go to Nonna's unless your ready to eat.  But sometimes I'm just not hungry.  "Oh you ate?  How about something sweet?"  Ohhh Nonna, you got me!  Before I utter the word, she's taking out the jar and sticking the bread in the toaster.


Mmmmm, warm Italian bread smothered in Nutella goodness.  

So of course when we decided on an Italian potluck at work, I obviously was going to bring something in with Nutella.  And I've always had a thing for biscotti, so I combined them!

Nutella Biscotti
Recipe from Jenn's Baking Chamber
 
2 3/4 c. all-purpose flour
1 c. sugar
2 tsp baking powder
1/4 tsp salt
2 Tbsp Cocoa powder
1/2 c. mini semisweet chocolate chips
1 Tbsp oil
1 tsp vanilla extract
3 large eggs
1/2 c. Nutella (Next time I might use 3/4 to get more Nutella flavor)

Grab your ingredients and GO!

-Preheat oven to 350F and line cookie sheet with parchment paper, which makes life a whole lot less messy.

-In medium bowl mix together dry ingredients; flour, sugar, baking powder, salt, cocoa, and chips, then set aside
- In a large bowl mix together with wooden spoon oil, vanilla, eggs, and Nutella until combined
- Add flour mixture to egg mixture and stir until combined (mixture won't completely combine in bowl and will look dry and crumbly)
- Pour mixture onto floured surface and knead 7 or 8 times until mixture comes together
- Divide dough in half and shape into flat, round logs 8in long and 1in thick
- Place logs on cookie sheet and bake for 35 min, then remove from pan and cool on wire racks for 10 min
- Then cut logs diagonally into 1/2in slices and lay them flat down on cut edge and place on cookie sheet again
- Bake for 10min then flip and bake for another 10 min
- Let cool on rack. They will harden up as they cool

Dry ingredients in bowl.  Set aside.
Mix wet ingredients until combined.  Add dry.
Mix until you have a crumbly dough.

Knead 7-8 times until dough comes together.  Roll out. 
Bake at 350 for 35 min, then let cool. 
Slice, then bake again. 

Now your ready for a Nutella Biscotti photo shoot.




Or you could just eat them. Whatever floats your boat!
